If you are anything like me, you get overwhelmed when you read the menu at The Cheesecake Factory. Before I go to one, I promise myself that I am going to try something new and not get the same 2 things as usual. But I don’t! I don’t! I end up getting the same darn thing I had the last time. The brain power required to make such a huge decision is more than I care to spend over a lunch! But even with a menu as large at the The Cheesecake Factory’s, there are typically a few items that stand out as fan favorites. Their Buffalo Blasts appetizer is one of those fan favorites.
The Buffalo Blast appetizer at The Cheesecake Factory is a testament to the art of crafting a dish that balances flavors and textures to perfection. It starts with tender, seasoned chicken that has been tossed in Buffalo sauce, and mixed with creamy Mozzarella cheese, imparting that quintessential tangy and slightly spicy kick. What takes this dish to the next level is the genius addition of crispy wonton wrappers that envelop the chicken. These wrappers are deep-fried to a glorious golden brown, resulting in a satisfying crunch that contrasts beautifully with the creamy chicken filling.

Serve the Buffalo Blasts with an extra side of Buffalo sauce, fresh celery, and the World’s BEST Blue Cheese Dressing
Ingredients
- 3 cups shredded, rotisserie chicken (white & dark)
- 10 ounces of freshly shredded, whole-milk mozzarella
- ¾ cup Frank’s Buffalo hot sauce
- 2 packages of Nasoya wonton wrappers
- 2 large eggs, beaten
- 1 ½ cups all-purpose four
- Canola oil, for frying
- Celery sticks, for serving
- Blue Cheese dressing, for dipping
- Kosher salt
Instructions
Pull and finely chop all meat from rotisserie chicken. Mix well with the shredded mozzarella and Frank’s Buffalo sauce, in a large mixing bowl.
On a flat surface, lay several of the wonton wrappers diagonally. Using the tip of your finger, rub the edges of wrapper with some of the beaten egg (this helps to seal the wonton wrapper and filling)
Using a 1 TBL measured spoon, place 1 heaping TBL of the chicken/cheese mixture in the center of the wrapper. Pull the wrapper from bottom corner to top corner and pinch the edges of the wonton to secure the filling. Use a bit more beaten egg, if necessary, to ensure that the filling is secure.
In a dry bowl, mix flour with 2 pinches of kosher salt. Gently dip each stuffed wonton in beaten egg, then dredge in flour mixture. Dip back in egg and dredge a second time in flour. This is called double-dredging and it ensures a very crispy wonton after frying.
In a very deep saucepan or Dutch oven, heat 3 inches of canola oil to 350 degrees F. Once the oil comes to temperature, fry the stuffed/coated wontons for 3-4 minutes per side, or until golden brown and very crispy. Work in batches, so as not to overcrowd the fry oil. Remove the fried Buffalo Blast and place on drainage rack to drain and cool.
Serve with fresh celery, extra Buffalo sauce and the World’s Best Blue Cheese Dressing
