This recipe comes straight from Chipotle’s Corporate Chef and I was impressed with the simplicity, yet, flavor it has. I will admit, when I make MY guacamole, I really ramp up the ingredients. I roast the jalapenos. I add minced garlic. I sprinkle in ground cumin. But after tasting Chipotle’s Guac, I am wondering if I really need to go to all the effort! Well, I guess that is what makes Chipotle…CHIPOTLE!
There’s not much more to say about this recipe. Except, I would be remiss if I didn’t give you some great ideas for a fun Mexican night at home.
Try this Guac with Chipotle’s Garlic Guajillo Steak, Chipotle’s Pollo Asado, CPK’S Mexican Street Corn and Casa Gallardo’s Salsa Ranchera. Ole! I’ll be over at 5:00 with a pitcher of Killer Margaritas.
Ingredients
- 4 large, very ripe avocados. Not mushy to the touch, however.
- 4 tsp. lime juice
- 4 TBL fresh cilantro, minced
- 1/4 cup red onion, small dice
- 1 fresh jalapeno, seeds included, small dice
- 1/2 tsp. Kosher salt
Instructions
Peel the avocados and remove the seed. Place all ingredients in a large mixing bowl and use a potato masher to mash avocados and combine the ingredients. You are looking for an extra-smooth consistency, but with a few small chunks.
Tip: An easier and faster way is to use a hand mixture to mash the avocado. If you opt for a hand-mixer, then hand-mix only the avocado, leaving the consistency smooth, but with a few small chunks. Then fold in the rest of the ingredients once avocado is at the desired consistency.
