Ingredients
- 3 firm Haas avocados, ¼” dice
- 4 TBL sundried tomatoes in oil, finely chopped
- 1 cup + 2 TBL fresh cilantro, chopped
- 1/3 cup red onion, finely diced (divided)
- Package of egg roll wrappers
- ½ cup cashews
- ¼ cup scallions, green only, finely chopped
- 1/3 cup honey
- 1 tsp. tamarind paste
- 3 TBL EVOO
- 3 TBL water
- 4 tsp. white vinegar
- EVOO and cracked black pepper
- Canola oil for deep frying
Instructions
In a food processor or blender, puree 1 cup of cilantro (including stems), cashews, scallions, honey, tamarind paste, EVOO, water, 2 pinches of Kosher salt and 3 cranks of cracked black pepper. Puree until smooth and refrigerate until ready for use.
In a medium sized mixing bowl, mix the avocado, sundried tomatoes, 2 TBL cilantro, red onion and 2 pinches of Kosher salt. Mix well.
To form eggrolls, lay one eggroll wrapper on a diagonal. Place 2 TBL of avocado filling directly below the center of wrapper. Start rolling with the corner nearest you and roll one full turn. Tuck in the wrapper sides and continue to roll to the top corner. Use water on your fingertips as a “glue” to hold wrapper in place while wrapping. Continue process until you run out of filling (about 6 full-sized eggrolls).
In a wok or large sauté pan, heat 1 ½ “of canola oil to 365 degrees. Place eggrolls into oil, working in batches if necessary. Allow eggroll skin to get golden and crispy on one side, flip in the oil and fry the other side until golden and crispy. Remove and set on a drainage rack. To serve, cut eggroll in half on a bias (diagonal) and serve with Tamarind Cashew Dip.
